Butterfly Pea Blossom Gin

Spring is on fast forward to summer now.

Tiny blue flowers called woodland forget-me-nots have taken over the front yard. They look so pretty I'm refusing to mow the lawn. 🙄

A family of deer 🦌 pays us early morning visits and seem to particularly love the bark of the apple trees (who knew).

The spruce buds look like their tips have been dipped in bright green paint, so I'm all set to pick and steep them in syrup for earthy cocktails. It's a race between me and the deer, to see who gets them first.🌲

Speaking of earthy cocktails...I steeped butterfly pea blossoms in gin, which creates a beautiful violet color. The method is simple enough. Add a pinch of dried butterfly pea blossoms to your favorite gin and allow to steep for an hour. The blossoms will color the gin but do not impart a flavor.

The cocktail below is my new spring favorite.

Ingredients

2 oz butterfly pea infused gin

1 oz lime juice

1 egg white

Add all ingredients to a cocktail shaker with ice and shake. Pour over ice and sip in the spring sunshine.
